Herring in Cream Salad Platter

November 11, 2013

I don’t think I ever had herring until I started working for TWA and spent a lot of time in Germany.  At first I was skeptical, but after my first taste of herring in cream I was a confirmed lover.  Fortunately, for me Taste of Europe Delicatessen is very close to my home and the availability of wonderful Polish and German treats can be mine on a daily basis.  I originally started making this platter for Sunday Brunch but as time went on it became a wonderful appetizer or salad for lunch or dinner guests.  And now it is ‘dinner for two’ on one of the first nights we can sit outside to eat.

Herring in Cream Salad Platter

  • Herring Fillets in Cream Sauce (1 lb. 10 oz.)
  • 1 Can Whole Beets (15 oz.)
  • 1 Lg. Cucumber (peeled and sliced)
  • 4 Campari Tomatoes (halved)
  • 4 Hard Boiled Eggs (halved)
  • 1-2 Slices of Red Onion (chopped)
  • Handful of Chives (snipped)

  1. Arrange the herring, beets, cucumber, tomatoes and eggs on a chilled platter
  2. Sprinkle with the red onion and chives; cover and chill until ready to serve

(Serves 4 as an appetizer or 2 for dinner)

Recipe inspired by “Food and Wine Magazine”; and of course many restaurants in Germany
