Roasted Juliette Tomatoes

I love these tomatoes with so many different types of food whether it be breakfast, lunch or dinner.  A no-brainer side dish that will add great taste to meats, poultry, fish eggs, casseroles, and anything else you can think of.   And the good news is they can do this all on their own. 

Roasted Juliette Tomatoes

Ingredients

  • 1 Pint Juliette Tomatoes
  • 1-2 oz. Extra Virgin Olive Oil
  • Salt
  • Freshly Ground Pepper
  • Parmesan Cheese (grated for garnish-Optional)

Preparation

  1. Preheat oven to 350 degrees
  2. Arrange tomatoes in a single layer in a baking dish
  3. Drizzle with olive oil, add salt and pepper
  4. Roast for about 30-45 minutes (until tomatoes begin to pop or the desired color)
  5. Serve in a warmed bowl with a side dish of grated parmesan cheese

(Serves 4-6)

    I hate that I’m allergic to tomatoes but my mom would love this recipe. Thanks for sharing.

      Sorry to hear about your allergy, food allergies are not fun, hope your mom likes it, add some Parmesan and Italian herbs and you can spice it up for her! Love your avatar.
