Black Beans with Corn and Rice Casserole

This flavorful casserole as a side dish or the main course is always welcome. It’s also a favorite for parties when you need a quick dish to bring for friends.
Black Beans with Corn and Rice Casserole
Ingredients
- 1 T. Unsalted Butter
- 1 Small Onion (diced)
- 2 C. Cooked White Rice
- 1 C. Black Beans
- 1 C. Corn
- Sour Cream
- 1 1/4 C. Cheese
Preparation
- Saute the onion in the butter and set aside
- Add the onion to the cooked rice
- Add the black beans, corn, sour cream and salsa to the rice and mix well
- Put in a casserole dish; cover with the cheese
- Bake at 350 degrees for approx. 35-40 minutes
