Black Beans with Corn and Rice Casserole

This flavorful casserole as a side dish or the main course is always welcome.  It’s also a favorite for parties when you need a quick dish to bring for friends.

Black Beans with Corn and Rice Casserole

Ingredients

  • 1 T. Unsalted Butter
  • 1 Small Onion (diced)
  • 2 C. Cooked White Rice
  • 1 C. Black Beans
  • 1 C. Corn
  • Sour Cream
  • 1 1/4 C.   Cheese

Preparation

  1. Saute the onion in the butter and set aside
  2. Add the onion to the cooked rice
  3. Add the black beans, corn, sour cream and salsa to the rice and mix well
  4. Put in a casserole dish; cover with the cheese
  5. Bake at 350 degrees for approx. 35-40 minutes
