Bacon and Banana Upside Down Cake

Yes, breakfast.  I wanted pancakes and bacon but this was just so much easier, especially when you have guests.  I have been known to take a small slice of this cake topped with vanilla ice cream for special desserts.

Bacon and Banana Upside Down Cake

Ingredients

  • 1 1/2 C. Flour
  • 2 1/2 t. Baking Powder
  • 1/4 t. Salt
  • 1/3 C. Shortening
  • 2/3 C. Sugar
  • 1 Lg. Egg (beaten)
  • 3/4 t. Vanilla Extract
  • 1/2 C. Whole Milk

Preparation

  1. Whisk together the flour, baking powder and salt (or sift)
  2. Cream together the shortening and sugar
  3. Add the beaten egg; beat thoroughly and add the vanilla
  4. Add dry ingredients alternately with the mlkl; stir only enough after each addition to blend thoroughly
  5. Bake at 350 degrees for35 minutes
  6. Remove from oven and place on wire rack to cool for 10 minutes
  7. Run a knife around the edge and turn out on a serving plate

    My roommates and I are always in a hassle to head off to work in the mornings and making breakfast usually takes up time. But since we came across Marie Callender’s waffle & pancake mixes, breakfast is now a must have meal. Find them online at http://mccornbread.com/ or in your nearest Costco in San Jose, Cali.
