Strawberry and Blueberry Gelatin Mold

It has been years since I have made a gelatin mold and why I was craving such a thing is really the question.  But to wake up this morning and having it ready was such a nice treat with some Greek Yogurt.

Strawberry and Blueberry Gelatin Mold

Ingredients

  • 2 Packages Raspberry Gelatin (3 oz. each)
  • 2 Cups Cranberry Juice
  •  1 1/2 C. Club Soda (chilled)
  • 1 t. Fresh Lemon Juice
  • 1 C. Strawberries (sliced)
  • 2 C. Blueberries
  • Plain Greek Yogurt

Preparation

  1. Dissolve the gelatin in boiling cranberry juice; let stand for 10 minutes
  2. Stir in the club soda and lemon juice; refrigerate for approx. 45 minutes until partially set
  3. Fold in the berries; pour into a 6 C. mold (coated with cooking spray)
  4. Refrigerate for 4 hours
  5. When set unmold by placing mold inverted on plate; place a hot towel on top of mold for about 2 minutes
  6. To serve put 2 T of yogurt on chilled plated and smear around plate; slice a section of the mold and place on top of the yogurt; add a dollop on top
