Spinach and Onion Tart

The hotter it gets the less I want to eat.  Today is one of those days that I wish there was just a pill.  But this tart is loaded with flavor and ready in a hurry.


Spinach and Onion Tart


  • 1 Pastry Shell (homemade or bought)
  • 3 Large Onions (sliced)
  • 2 T. Unsalted Butter
  • 1 Bag Fresh Spinach
  • Salt and Pepper to taste
  • 1/2 C. Shredded Parmesan Cheese


  1. Caramelize the onions in the butter; set aside
  2. Saute the spinach for a few short minutes; set aside
  3. Set up the pie dough in a tart pan and trim edges
  4. Layer the bottom with the onion; add the spinach
  5. Add the Parmesan Cheese
  6. Bake at 350 degrees approx. 34-40 minutes






Serves 4-6
