Vegetable Fried Rice

I do not know how to make Chinese Food, but I do try.  And it is always delicious.  I still cannot make all of the favorites that I order from my local Chinese Restaurants, yet when I make my own they are better.

Vegetable Fried Rice

Ingredients

  • 3 T. Soy Sauce (and more if you like/love)
  • 1 t. Sugar
  • 1/4 C. Vegetable Oil
  • 3 Large Eggs (lightly beaten)
  • 3-4 Garlic Cloves (mince)
  • 2 t. Fresh Ginger (grated)
  • 4-6 C. Cold Cooked Rice
  • Salt and Pepper (to taste)
  • 4 Scallions (white and green parts, chopped)
  • 1 12-14 oz. Frozen Asian Style Vegetables
  • 2 t. Sesame Oil

Preparation

  1. Stir the soy sauce and sugar in a small bowl
  2. Heat 2 T. vegetable oil in a wok over medium high; add the eggs and cook; stir once or twice just until set
  3. Transfer to a small bowl and wipe out pan
  4. Heat the remaining oil in the same pan; saute the garlic and ginger for 30 seconds
  5. Add the rice, salt and pepper and stir fry until thoroughly heated and begins to crisp
  6. Add soy sauce mixture, scallions and vegetables; stir fry until heated thoroughly
  7. Return the egg to pan and mix until just combined
  8. Drizzle with sesame oil and serve
