Coconut Macaroons

The most simple cookie ever. This is the basic and most simple recipe. Dress them up, change their flavor, eat and enjoy.


Coconut Macaroons


  • 3 Lg. Egg Whites
  • 1/2 C. Sugar
  • 1/2 t. Pure Vanilla Extract
  • 1/4 t. Kosher Salt
  • 1 14 oz. Pkg.. Sweetened Shredded Coconut


  1. Preheat oven to 325 degrees; line 2 baking sheets with parchment
  2. Whisk together the egg whites, sugar, vanilla and salt in a medium bowl until glossy, foamy and the sugar is mostly dissolved
  3. Fold in the cocount; stir until well blended
  4. Drop the batter (approx. 2 T.) in mounds at least 1″ apart on baking sheet
  5. Bake for 30-25 minutes/let cool completely on a wire rack





Yield: 16 Cookies
