Green Bean Salad

Sometimes I forget this green bean salad however if you make fresh green beans for a side dish be sure and do some extras to add to any salad.  We had a salad buffet dinner the other night and this is one of the stars.


Green Bean Salad


  • 2 lb. Fresh Green Beans (trimmed and cut)
  • 1/4 C. Olive Oil
  • 3 T. Fresh Lemom Juice
  • 3 T. Balsamic Vinegar1/4 t. salt
  • 1/4t. Garlic Powder
  • 1/4 t. Ground Mustard
  • 1/8 t. Pepper
  • 1/2 Lg. Red Onion (chopped)
  • 3 C. Cherry Tomatoes (halved)
  • 1 C. Feta Cheese or more (crumbled)


  1. Steam the beans/chill with ice water/put in refrigerator covered until ready to make the salad
  2. In a small bowl, whisk oil, lmon juice, vinegar, salt, garlic pwoder, mustard and pepper; drizzel over the beans and add the onion; toss well
  3. Cover and refrigerate for approximately 1 hour
  4. Prior to serving stir the tomatoes and feta cheese
  5. Serve on a chilled salad plate





Serves: 4-6

    I love green beans cold or at room temp so this is right up my alley. Looks delicious.
