Cookies cannot be made every day of the week here in South Florida, well you can but it is difficult due to the humidity for certain types, but you can make candy almost every day.  Here is a quick and simple recipe for those last-minute gifts you had no idea you would need nor on any list.  There is always plenty of chocolate in my home and usually a large variety of nuts and there it is, gifts in a hurry for the last-minute party you are invited to attend.  Buy some inexpensive Christmas plates at a local charity store and ‘gifts are ready’.  Merry Christmas.

Dark Chocolate Nut Bark

Ingredients *

  • 1/3 C. Almonds (chopped)
  • 1/3 C. Walnuts (chopped)
  • 1/3 C. Pecans (chopped)
  • 6 oz. Dark Chocolate

* Use any mixture of nuts you prefer

Preparation

  1. Saute the nuts for few moments to bring out all their flavor; set aside to cool
  2. Line a rimmed baking sheet with foil
  3. Melt the chocolate in the top of a double boiler over hot but not boiling water; stir until melted
  4. Combine the nuts and chocolate and pour into the prepared baking sheet
  5. Refrigerate until set (about 30 minutes)
  6. When chilled transfer the bark and foil to a cutting board; use a sharp knife to cut in squares or random sized pieces

Yield: Approx. 24-30 pieces
