Flourless Chocolate Cake

This cake in my home is now known as “Soulless GOP Coconut and Nut Cake”.  If you don’t like the name you might like the cake.  This simple chocolate cake just alone is the fastest cake ever, but because I had a few Republicans for dinner during the shutdown I thought I would ‘Let Them Eat Cake’.


Flourless Chocolate Cake


  • 4 oz. “Fine Quality” Bittersweet Chocolae
  • 1/2 C. Unsalted Butter
  • 3/4 C. Sugar
  • 3 Large Egss
  • 1/2 C. Unsweetened Cocoa Powder (addl. if using to sprinkle top of cake or cake plate)


  1. Preheat oven to 375 degrees; butter an 8″ round cake pan, line with wax paper and butter paper as well
  2. In a metal bowl set over a saucepan of barely simmering water melt the chocolate with the butter, stirring until very smooth
  3. Remove chocolate and butter mixture and whisk sugar into the mixture
  4. Add the eggs and whisk well
  5. Sift the cocoa powder over mixture and whisk until combined
  6. Pour batter into cake pan and bake at375 degrees for approx. 25 minutes.
  7. Remove/cool on a rack for 5 minutes, invert onto serving plate
  8. Decorate with Cocoa Powder, 10X or go wild with some Republican Nuts

Coconut Pecan Frosting Glaze:

  • 1 1/2 T. Butter (melted
  • 1/4 C. Brown Sugar
  • 1/4 C. Sweetened Shredded Coconut
  • 1/4 C. Pecans (chopped
  • 1-2 T. Whole Milk
  • 1/4 t. Vanilla Extract
