White Asparagus and Artichoke Salad

Welcome to the “I will not do anything salad”. This is what happens in Florida at the end of August. And it can be delicious as well as a ‘go to’ salad. I must say growing herbs in South Florida can sometimes be a challenge but “chives” will always save your day. And if you must, make a salad dressing. I just use the marinade which is light and refreshing.
White Asparagus and Artichoke Salad
Ingredients
- 1 Jar White Asparagus (12 oz.) (drained)
- 2 Jars Marinated Quartered Artichoke Hearts (6 oz ; reserve liquid)
- 4-6 Stuffed Olives (for garnish)
- 1-2 oz. Feta Cheese (crumbled for garnish)
- Handful of Fresh Chives (snipped for garnish)
- Add some additional garnishes *
* Always keep some bacos, salad crisps, onion rings, etc. for emergencies for toppings
Preparation
- Use chilled plates
- Arrange asparagus and artichokes
- Add olives, Feta Cheese and chives and serve
Serves: 1-4
