Almond Coconut Cookies

“That woman” was in my kitchen last night again for ‘Midnight Summer Cookie Madness’.  (That would be me.)  And these cookies were delectable and perfect.


Almond Coconut Cookies


  • 1/2 C. Unsalted Butter
  • 3/4 C. Sugar
  • 1 Lg. Egg
  • 1/2 t. Almond Extract
  • 1 T. Heavy Cream (or whole milk)
  • 1 1/4 C. Flour
  • 1/4 t. Salt
  • 1/4 t. Baking Powder
  • 1/2. C. Almonds (chopped)
  • 1/2 C. Coconut


  1. Cream the butter and sugar until light and fluffy
  2. Beat in the sugar and mix well
  3. Add the egg and almond extract and mix together well
  4. Add the cream and beat thoroughly
  5. Sift the flour, baking powder and salt together
  6. Add to the butter mixture and blend well
  7. Stir in the chopped almonds and coconut thoroughly
  8. Arrange by teaspoonful on a cookie sheet (1″ apart)
  9. Bake at 375 Degrees on greased cookie sheet for 8 minutes
  10. Remove from oven; let sit a couple of minutes; place on wire rack for complete cooling





Approximately 20-24 cookies
