Dulce de Leche Coconut Rice Pudding

The heat is killing me here in South Florida a few weeks earlier than normal for me.  Except for salads and chilled soups I do make an exception to turn on the oven or range at midnight to prepare something for the next day.  (I will make cookies at any time of day or night).  Therefore I thought I would share a simple, sweet and rich dessert you can make at midnight for tomorrow’s guests for dinner or breakfast.


Dulce de Leche Coconut Rice Pudding


  • 1 C. Rice (Valencia) (or your preference)
  • 1 Can Coconut Milk (14 oz.)
  • 4-10 oz. Dulce de Leche (this huge range is due to the sweetness you desire, taste accordingly)
  • 2 -4 oz. Whole Milk (use as necessary at final tasting)


  1. Add the combination of Coconut milk, dulce de leche and half and half,  to a medium pan
  2. Bring to boil, then simmer until rice has thickened
  3. Serve warm or pour into cups to chill (about 2-3 hrs.)
  4. Optional garnishes of toasted coconut, whipped cream or  a drizzle of heavy cream
