Butterscotch Chip Cookies

This has been a great week here in Florida for making cookies.  Cooler temperatures, low humidity and St. Patrick’s Day coming up on Sunday.  (There can never be too many choices on that special day).  I have always been a fan of “Fannie Farmer” cookies and this comes from the basic sugar cookie recipe (you will see plenty of these on my plate).


Butterscotch Chip Cookies


  • 1/2 C. Unsalted Butter (melted)
  • 3/4 C. Brown Sugar
  • 1 Lg. Egg or 2 Egg Yolks
  • 1/2 t. Vanilla Extract
  • 1 T. Cream or Milk
  • 1 1/4 C. Flour
  • 1/4 t. Salt
  • 1/4 t. Baking Powder


  1. Preheat oven to 375 degrees
  2. Add the sugar to the melted butter and heat slowly until well blended *
  3. Add the egg and vanilla and beat thoroughly; add the cream or milk and combine thoroughly
  4. In another bowl sift together the flour, salt and baking powder
  5. Stir the flour mixture into the butter mixture and blend well
  6. Use a teaspoon to arrange on a buttered cookie sheet (1″ apart)
  7. Bake for 8-10 min./cool on a wired rack

* 1/4 C. Chopped Walnuts / Add nuts at this time (optional)






Yield: Approx. 2 Dozen
