Vidalia Onion and Feta Tart

A tasty appetizer to start any meal or a simple tart to share in the garden this combination brings lots of flavor.  A friend of mine had an apartment in Athens, Greece for many years and this was always a quick and simple appetizer when we cooked dinner for friends or just wanted something quick before we went out to join in all the fun going on downtown Athens.

Vidalia Onion and Feta Tart


  • 1 Sheet Puff Pastry (Pillsbury)
  • 4 Medium Onions (sliced)
  • 1 T. Olive Oil
  • 1 T. Unsalted Butter
  • 1/2 C. Parmesan Cheese (grated)
  • 4 oz. Feta Cheese
  • 8-10 Kalamata Olives (halved)
  • Fresh Chives (snipped)
  • Salt and Freshly Ground Pepper (to taste)


  1. Saute onions in butter until translucent
  2. Put pastry in baking dish
  3. Sprinkle Parmesan cheese on the bottom
  4. Add the onions
  5. Add the olives and feta cheese; crumble the feta cheese over top and add the fresh chives
  6. Bake at 350 degrees for about 35-40 minutes
  7. Cut in pieces and serve; add some chives for garnish

(Serves 9/for appetizer)
