Marinated Cucumber Celery and Bell Pepper Salad

A great crunchy and healthy salad.  If I do it right I make it right after I get in from the grocery store (yes, we always say we will do those great things, and sometimes it happens).  But this salad is made of the three items from the vegetable department that I might waste and what a delicious treat.  It will last 3-4 days, makes salads for special dinners or take a cup or two to work.  Score!!!

Marinated Cucumber Celery and Bell Pepper


  • 2 Cucumbers (peeled and quartered)
  • 2 Celery Sticks (washed/halved and sliced)
  • 1 Green Pepper (washed/diced)
  • Pinch of Freshly Grated Pepper
  • 1/2 C. Italian Dressing (make your own or purchase)
  • 8 Stuffed Olives (for garnish for 4 servings)


  1. In a medium-sized bowl toss the cucumbers, celery and green peppers
  2. Add the dressing (see below for recipe) and toss again; seal and refrigerate at least 3-4 hours (turn container upside down halfway through refrigeration)
  3. Serve in chilled bowls and garnish with 2 stuffed olives per plate
