Pan Grilled Dolphin

Fresh, clean and light for a simple summer dinner.  Lately the only hot meals I am interested in will be making fish, as it will take just a few moments to cook.  I have always felt sorry for those that do not like fish or say they cannot cook fish.  You are so lost.

Pan Grilled Dolphin


  • 1 lb. Fresh Dolphin (Mahi-Mahi)
  • 2-3 Lemons
  • 2 T Olive Oil
  • 3 T. Unsalted Butter
  • Salt and Pepper
  • Fresh Parsley (for garnish)


  1. Salt and Pepper Fish
  2. Squeeze 1 lemon over fish
  3. Heat grill pan with oil, butter and juice of 1 lemon
  4. Put dolphin in hot pan and cook for about 2 minutes on each side
  5. Serve immediately and garnish

Served here with Scalloped Potatoes and Roasted Tomatoes
