Strawberry Lemon Popsicles

On some of these hot days and nights this is really the best dessert, cold, fruity and luscious.  The heat has been fierce and popsicles are the greatest snack or delicious dessert*.

Strawberry Lemon Popsicles


  • 1 lb. Strawberries (rinsed and hulled)
  • 3/4 C. Granulated Sugar
  • 1 T. Fresh Lemon Juice
  • Zest of 1 Lemon
  • 1/4 – 3/4 C. Fresh Lemonade


  1. Slice strawberries and put in a medium bowl; add the sugar and stir until strawberries are thoroughly coated in the sugar
  2. Cover and refrigerate for at least 1 hour
  3. Remove strawberries from refrigerator and put in a blender; add the lemon juice and puree until smooth (strain if you want to remove the seeds/Optional)
  4. Add the lemon zest and lemonade (amount of lemonade determined by thickness desired)
  5. Pour mixture into popsicle molds; put in freezer for at least 3-4 hours
  6. When frozen remove from freezer and let sit for a few moments before you remove them from the molds and serve immediately

* For a fancy dessert: Unmold the popsicle and cut in 3-4 pieces on a plate; garnish with fresh berries
