Lemon Sugar Cookies

Sat in the garden this afternoon and since everyone loves a delicious home-baked sugar cookie I made these treats for us.  They were more than happy since I added some fresh lemon and they were  pleasantly surprised.  I make sugar cookies all the time but when I have lemons in the garden this recipe becomes everyone’s top choice.  There won’t be many more lemons in my yard and I have yet to figure out how many varieties of trees I need to have fresh lemons “most” of the year but I will continue to work on that.

Lemon Sugar Cookies


  • 1/2 C. Unsalted Butter
  • 3/4 C. Sugar
  • 1 Lg. Egg
  • 1/2 t. Lemon Extract
  • 2 t. Grated Lemon Rind
  • 1 t. Heavy Cream (or whole milk)
  • 1 1/4 C. Flour
  • 1/4 t. Salt
  • 1/4 t. Baking Powder


  1. Cream the butter and sugar until light and fluffy
  2. Beat in the sugar and mix well
  3. Add the egg, lemon extract and lemon rind and mix together well
  4. Add the cream and beat thoroughly
  5. Sift the flour, baking powder and salt together
  6. Add to the butter mixture and blend well
  7. Arrange by teaspoonful on a cookie sheet (1″ apart)
  8. Bake at 375 Degrees on greased cookie sheet for 8 minutes
  9. Remove from oven; let sit a couple of minutes; place on wire rack for complete cooling

(Makes 24-36 Cookies)
