Cabbage and Irish Sausage

March 23, 2012

You don’t have to be Irish to enjoy this quick and tasty dinner, just hungry.  I am fortunate to have “The British Store” a few blocks from my home and can regularly buy some Irish sausage but have no fear it will taste just as good with your selection of sausage and dinner will be ready in minutes.

Cabbage and Irish Sausage

  • Irish Sausage (5) (substitute any favorite sausage if not avail.)
  • 2 T. Olive Oil
  • 1 Head Cabbage (roughly chopped)
  • 1 Lg. Onion (sliced thinly)
  • 3 T. Unsalted Butter (maybe more)
  • Salt and Freshly Ground Pepper
  • Dash of Cayenne Pepper
  • 1/2 C. Heavy Cream (may substitute Half & Half)
  • 1/2  – 1 C. Parmesan Cheese
  • Fresh Parsley (some chopped; some sprigs)

  1. Saute the sausage with the olive oil until browned on all sides; set aside
  2. Saute the onions in the butter until translucent; add the cabbage and seasonings
  3. Cook until the cabbage begins to melt
  4. Add the cream and the Parmesan cheese and continue to heat until thoroughly cooked and combined
  5. Serve immediately on warmed plates with the sausage and garnish with parsley
