Nutella Cookies

Cookies for “Nutella Lovers”.  I usually make these for breakfast since Nutella is my first choice in the morning.  I do believe they are just as tasty in the afternoon or evening and especially at 0400.  You know who you are.  Many years ago (and still to this day-or night) I always woke up around 0300-0600 to have some lovely cookies and then go back to bed to complete a dream and have the best rest of the day.  I have made many recipes with Nutella for cookies but this is the one I prefer.  Sometimes some nuts can be added, depending on your guests.

Nutella Cookies

Ingredients

  • 1/2 C. Unsalted Butter
  • 1/2 C. Granulated Sugar
  • 1/2 C. Light Brown Sugar (firmly packed)
  • 1/2 C. Nutella
  • 1 Lg. Egg
  • 1/2 t. Vanilla
  • 1 1/2 C. Flour
  • 1 t. Baking Soda
  • 1/4 t. Salt
  • 1/3 C. Chocolate Chips

Preparation

  1. Cream butter with an electric mixer until smooth; add in both sugars and beat on high for about 3 minutes
  2. Add the egg and vanilla and mix on low; add the Nutella and mix well
  3. Whisk together the flour, baking soda and salt; add the dry ingredients to the wet mixture and beat on low until incorporated; increase speed to medium and mix until dough is smooth; fold in the chocolate chips
  4. Using a teaspoon form the dough into balls and place on greased cookie sheet
  5. Bake at 350 degrees for about 6-7 minutes; remove from oven and let cool for about 5 minutes; transfer to a rack to cool completely

Yield/30-36 Cookies

    Oh, man, these were good! The whole batch disappeared within three days. Not joking. And it wasn’t all my doing either. *grin*
    The one warning I would give to others who make these is that after 6 – 7 minutes the cookies still look totally raw, but take them out of the oven anyways. Follow the recipe. *grin* They crisp and fall a lot in the first minute they’re out of the oven. I WAY overbaked the first tray of them, and I tried not to overbake the second tray but did anyways. And the cookies were still delicious – more of burnt-caramel flavor and gingersnap crisp texture – but I’ll bet they’re even better chewy-gooey as intended.

    I’ve only made Nutella no-bake cookies but I will have to try these. Looks like a perfect day to bake a batch!
