Apple and Walnut Crumb Cake

Any cake with the word “crumb” will get my attention.  Although I am retired I always try to make something special for me on a “Sunday Morning.”  I am sure it started in my youth as I worked at a farm in Connecticut as a young girl, and then a wonderful bakery through my teenage years, the airlines, which I loved working weekends (the rest of the week off) and my last jobs in real estate and home renovation (oh, yes call me on the weekends). Working weekends most of my life means something special to celebrate, relax, reflect and enjoy something sweet with a morning coffee this weekend.

Apple and Walnut Crumb Cake


  • 1 1/4 C. All-Purpose Flour
  • 2 1/4 t. Baking Powder
  • 1/2 C. Sugar
  • 1/2 t. Salt
  • 1/2 t. Ground Cinnamon
  • 1 Lg. Egg
  • 1/2 C. Whole Milk
  • 4 T. :Unsalted Butter (melted)
  • 2 Apples (peeled, cored and roughly chopped)
  • 1/2 C. Walnuts (chopped)
  • 1/2 C. Confectioners Sugar


  1. In a medium bowl combine the flour with the baking powder, sugar, salt and cinnamon
  2. In a small bowl beat the egg; add the milk and melted butter
  3. Add the egg mixture to the dry ingredients and mix well
  4. Add the apples and walnuts and combine thoroughly; pour into a prepared baking dish
