Hearts of Palm and Artichoke Salad

Dazzle your friends with this wonderful salad in moments.  I love to find these treats in my cabinets when trying to figure out which salad will be best during the winter months and not too many items at the grocer inspired me.  I usually keep these items well stocked all year but they do get a lot more table time at this time of year.  They are great to have on hand for additions to an elaborate antipasto for a fancy dinner as well.

Hearts of Palm and Artichoke Salad

Ingredients

  • Red Leaf Lettuce or Mixed Greens (or greens of your choice)
  • 1 Can Hearts of Palm (sliced)
  • 1 Can Marinated Artichoke Hearts
  • Fresh Parsley Leaves
  • Black Olives (for garnish) (I had none)

Preparation

  • Set up chilled plates with lettuce
  • Add the Hearts of Palm and Artichokes; add parsley
  • Drizzle the Vinaiagrette

(Serves 4)
