Stuffed Zucchini Boats

Zucchini is something I use for all meals and all courses and they make great snacks just cut up in thin slices.  Try these as an appetizer, side dish or just alone.  Anything you can imagine (sausage, mushrooms, any additional vegetables) will make a lasting impression in these boats.

Stuffed Zucchini Boats

Ingredients

  • 4 Medium Zucchini
  • 2 T. Olive Oil
  • 3/4 lb. Ground Beef
  • 1 Sm. Onion (chopped)
  • 1/2 Green Bell Pepper (chopped)
  • 1/2 Red Bell Pepper (chopped)
  • 1 C. Parmesan Cheeses (shredded)
  • Salt and Pepper to taste
  • Fresh Chives (for Garnish)

Preparation

  1. Wash zucchini and trim ends; cut in half lengthwise; scoop out the pulp (finely chop the pulp)
  2. In a large frying pan add the oil and onion and saute on medium heat until translucent (2-3 minutes
  3. Add the peppers and saute a few minutes (about 5); add the ground beef and zucchini pulp and heat until browned; drain; add 4 0z. of the Parmesan Cheese and stir in; set aside to cool
  4. Preheat oven to 350 degrees
  5. Place the zucchini on a baking sheet; drizzle with addl. olive oil and salt and pepper the boats; Fill the prepared zucchini with the stuffing mix
  6. Bake for about 25-30 minutes (until zucchini is tender is cheese is melting); remove from oven and serve on a warmed serving platter
