Lemon and Amaretti Cheesecake Parfaits

Many thanks to @ItalianDish!  Last month I made her “Strawberry Cheesecake Parfaits” which were wonderful and she suggested to change the fruits, crackers, etc. and I did.  I love lemon and usually here in Florida there are plenty of lemons in the house either from the grocer, the yard or numerous friend’s yards.  With just a few ingredients you can make a splendid dessert and make-believe you planned it.  I will make many more variations of this wonderful treat.  Let me know if you make any as well.

Lemon and Amaretti Cheesecake Parfaits


  • Lemon Filling (recipe below)
  • 1 C. (or more) Amaretti Biscotti (crumbled)
  • 2 T. Butter (melted)
  • 12 oz. Cream Cheese (room temp.)
  • 1/2 C. Sour Cream
  • 2/3 C. Confectioners’ Sugar (sifted)
  • 1 T.  Amaretto
  • 1 C. Heavy Cream

Lemon Filling


  • 3/4 C. Sugar
  • 2 T. Cornstarch
  • 1/8 t. salt
  • Grated zest of 1/2 Lemon
  • 1/2 C. Orange Juice or Water
  • 1/4 C. Fresh Lemon Juice (strained)
  • 3 Large Egg Yolks (or 1 large egg and 1 large egg yolk)
  • 1 T. Unsalted Butter

Preparation (Lemon Filling)

  1. Whisk together all ingredients except the butter in a saucepan
  2. Add the butter and cook, whisking constantly, scraping the bottom and corners of the pan to prevent scorching over medium heat until the mixture comes to a simmer thickens dramatically.
  3. Continue to cook, whisking briskly for about 30 seconds.
  4. Using a spatula, scrape the filling into a medium mesh sieve set over a bowl and strain the filling into the bowl
  5. Cover the surface of the filling with a piece of wax or parchment paper and refrigerate to thicken
  6. Stir gently if necessary before using, do not beat (This keeps refrigerated up to 2 days)

Preparation (Parfaits)

  1. Make Lemon Filling (cover and refrigerate until ready to set up parfaits
  2. Mix the Amaretti Biscotti with the melted butter and set aside to cool
  3. Beat cream cheese with a mixer until smooth; add the sour cream confectioners; sugar and Amaretto and beat until thoroughly combined
  4. Whip the cream in a separate bowl until you have stiff peaks; fold the cream into the cream cheese mixture


  1. Start with 1-2 T. of the Almaretti cookie mixture in the bottom of a serving glass
  2. Next layer some cheesecake mixture; add some lemon mixture and repeat
  1. Chill until ready to serve
