Sweet and Salty Cookie Bars

When I crave some sweet and salty demons I make these (and they store well too).  I am gearing up the kitchen with lots of ingredients for Thanksgiving but I had to make something special just for me.  There will be plenty of pumpkin, apple and pecans coming my way this next week so this recipe satisfied my need for something different and some hidden in a secret place to keep me focused.  Save some for a cheesecake as well.

Sweet and Salty Cookie Bars

Ingredients

  • 2 C. All-Purpose Flour
  • 1 t Baking Soda
  • 1/2 t. Salt
  • 1 1/2 Sticks Unsalted Butter (room temperature)
  • 1 C. Light Brown Sugar
  • 1/2 C. Granulated Sugar
  • 2 Lg. Eggs
  • 2 t. Pure Vanilla Extract
  • 12 oz. Bittersweet Chocolate Chips (or Semi-Sweet)
  • 1 1/2 C. Pretzels (coarsely chopped)
  • 1/4 C. Chocolate Chips (optional for drizzling)
  • 1/4 C. Peanut Butter (optional for drizzling)
  • 1/4 C. Pretzels (crumbled for optional topping)

Preparation

  1. Preheat oven to 350 degrees; spray a 9×13 baking pan with cooking spray
  2. Whisk the flour, baking soda and salt in a medium bowl
  3. Beat butter and both sugars in a large bowl on medium until combined; add the eggs one at a time and the vanilla extract on low until the dry ingredients are incorporated
  4. Add the chocolate chips and pretzels and fold all
  5. Spread the batter in the pan and press down evenly; bake for 30 minutes (until golden brown
  6. Remove from oven and place on a rack to cool completely
  7. In a small bag melt the chocolate chips and peanut butter; drizzle over the top of the cookie bars; sprinkle with additional pretzels (optional)
  8. Let set before cutting into squares
