Strawberry Cheesecake Parfaits

This is what you do when you need a fast, exciting dessert thanks to www.italiandishblog.  I did add extra crumbled grahams as she noted and her cheese mixture is fabulous.  This will be a staple in my home with many different berries and fruits.  Although I had no problem finishing my dessert some of my guests thought half the amount would be enough for them.  Okay, next time I will make them smaller and save a few for breakfast.

Strawberry Cheesecake Parfaits

Ingredients

  • 1 lb. Strawberries (sliced) (save a couple for garnish)
  • 2 T. Sugar (divided)
  • 1 C. Graham Cracker Crumbs
  • 2 T. Butter (melted)
  • 12 oz. Cream Cheese (room temp.)
  • 1/2 C. Sour Cream
  • 2/3 C. Confectioners’ Sugar (sifted)
  • 1 T.  Amaretto
  • 1 C. Heavy Cream
  • 2-3 Fresh Strawberries (for garnish) optional
  • Fresh Mint Leaves (for garnish) optional

 Preparation

  1. Toss the sliced strawberries with 1 T. sugar and set aside
  2. Mix the graham crackers with the melted butter and 1 T. sugar
  3. Beat cream cheese with a mixer until smooth; add the sour cream confectioners; sugar and Amaretto and beat until thoroughly combined
  4. Whip the cream in a separate bowl until you have stiff peaks; fold the cream into the cream cheese mixture

Assemble

  1. Start with 1-2  T. of the graham cracker mixture in the bottom of a glass
  2. Next layer some cheesecake mixture; add some strawberries and repeat
  3. Top with some fresh strawberry slices or fresh mint leaves
  4. Chill until ready to serve

      Strawberries are starting now here in Fl/Lemons maybe next week, and some oranges too.
