Roasted Sliced Potatoes

I generally do not buy potato chips as I prefer these beauties.  Some friends (Thank God) came over to help clean the garage after the roofer finished.  What is wrong with me?  I closed the house to fend off the fumes, tar, wood and general mess but thought the interior of the garage would be fine?  No, it was not and every square inch will be cleaned.  As a special treat we had these snacks while we worked, easy to put together and a great treat for wonderful friends.  I usually make these as a side dish but they were great in the garden as well after a hard days work.  Thank you friends, you know who you are……

Roasted Sliced Potatoes


  • Potatoes (1 per person) (washed, dried and thinly sliced)
  • 2 t. Olive Oil (per potato)
  • Kosher Salt
  • Freshly Ground Black Pepper
  • (other freshly ground peppers) optional for a more spicy potato


  1. Preheat oven to 350 degrees
  2. Toss the sliced potatoes with the oil, salt and pepper
  3. Roast for approx. 35 minutes (sides will begin to crisp)
  4. Remove and drain on paper towels; serve immediately
