Blondies

In my kitchen and life I go back to the classics frequently.  I do love trying new recipes frequently, but there are the days the “comfort recipes”  bring back the flavors of years ago. Try them with various additions and find the one you love.

 Blondies

Ingredients

  • 3/4 C. Pecan Halves *
  • 1/2 C. Unsalted Butter
  • 1 C. All-Purpose Flour
  • 1/4 t. Salt
  • 1/4 t. Baking Soda
  • 1 Lg. Egg
  • 3/4 C Light Brown Sugar
  • 1 t.  Pure Vanilla Extract
  • 3 1/2 oz. White Chocolate (coarsely chopped) *

* Use any additions you prefer; this is old school and a favorite of mine

Preparation

  1. Preheat oven to 350 degrees; spray or butter an 8×8 square baking pan
  2. Place pecans on a baking sheet pan and bake for about 8 minutes; remove and let cool; chop
  3. Melt butter in a small saucepan; remove from heat and let cool to room temperature
  4. Whisk the flour, salt and baking powder in a medium bowl
  5. Beat the egg and brown sugar in a large bowl until light; add in the vanilla extract and the melted butter and beat
  6. Add the flour mixture and combine thoroughly; fold in the pecans and white chocolate
  7. Pour into prepared baking pan and bake for about 25-30 minutes; remove from oven and cool on a wire rack; cool completely
  8. Cut in squares and serve
