Brown Sugar and Pecan Cookies

So simple for a “Midnight Snack” and sometimes cookies are “Breakfast” in this house.  And why not, we have butter, eggs, flour, ginger and cinnamon involved and they might be healthier than a donut (pass the donuts too please).  A few friends came over this morning for coffee to help me put some things away from the yard while getting ready for a new roof installation and I surprised them with these wonderful cookies.  Roofing materials arrived, no roofers,  (typical for South Florida), so glad we had cookies.

Brown Sugar and Pecan Cookies


  • 1 1/2 Sticks Unsalted Butter (at room temp.)
  • 1 1/4 C. Brown Sugar (dark)
  • 1 Lg. Egg
  • 2 C. All-Purpose Flour
  • 2 t. Baking Soda
  • 1/2 t. Kosher Salt
  • 1/2 t. Ground Ginger
  • 1/2 t. Ground Cinnamon
  • 2 t. Pure Vanilla Extract
  • 1/2 C. Pecans (chopped)


  1. Preheat oven to 375 degrees
  2. Beat the butter and sugar in a bowl until smooth and creamy
  3. Add the egg and beat well
  4. In a large bowl mix together the flour, baking soda, salt and spices; continue to mix until well incorporated while scraping the sides of the bowl
  5. Add to the butter mixture and beat together thoroughly
  6. Add the vanilla and chopped pecans and mix thoroughly
  7. Drop by teaspoons on ungreased pan and bake approximately 8-10 minutes
  8. Remove, cool and place on a cooling rack

(Makes 24-30 Medium Cookies)
