Scrambled Eggs and Chorizo

A really tasty breakfast!  I have a bakery close to my home where they make their own chorizo so I consider myself extremely fortunate, but here in Florida all the grocery stores do carry numerous brands as well.  It is best to try all of them as they differ quite a bit from one company to another.  Not only are the spices quite different the textures are as well.

Scrambled Eggs and Chorizo

Ingredients (per person)

  • 4-6 1″ Pieces of Chorizo
  • 2 Large Eggs
  • 1 T. Milk
  • 1/2 t. Chives (chopped, for garnish)

Preparation

  1. Heat the chorizo in a small pan on medium heat
  2. Whisk the eggs in a bowl
  3. Add the eggs to the pan and scramble until desired consistency
  4. Add the milk and fold into the mixture
  5. Plate and add the chives

(Serves 1)
