Zucchini Fritti

Is it an appetizer, a side dish or a snack?  Please check “All of the above”.  One of my standard side dishes but I always make it for a great appetizer for friends and family too for a party.  Quick and easy to make and tastes great whether just hot from the frying pan or at room temperature.

 Zucchini Fritti


  • Medium Zucchini (washed)
  • 1/2 C. Olive Oil
  • Salt and Pepper to taste
  • 1/4 C. Parmesan Cheese (finely grated for garnish)
  • Fresh Basil and Juliette Tomatoes (optional for garnish)


  1. Cut ends off zucchini and cut into eighths
  2. Heat oil and fry zucchini in 2 batches (turn as they cook)
  3. Drain on paper towels, salt and pepper to taste
  4. Sprinkle with finely grated Parmesan Cheese
  5. Plate on a warmed serving plate and garnish with fresh basil and Juliette Tomatoes

(Serves 4-6)
