Banana Crumb Cake
If you love crumb cake and banana cake this one is for you. When I saw this on www.bakespace.com I made it the next day and I will be making it many times again. This cake reminded me of a wonderful “crumb cake” that was made at a bakery I worked at in Lake Park, Florida (Siegfried’s Bakery”) during my High School years at Riviera Beach High School (which is now called “Suncoast”). May I suggest if you work after school or on weekends during High School, you will enjoy working at a bakery while enjoying all the sweet benefits. “Siegfried’s Bakery” was owned by the baker “Ziggy” aka Mr. Siegfried and his son and I went to school together, so in some ways it was my “after school” family. The only thing I will change with this recipe is double or triple the crumb topping-the “Siegfried Way”.
Banana Crumb Cake
Ingredients
- 1 1/2 C. All Purpose Flour
- 1 t. Baking Soda
- 1 t. Baking Powder
- 1/2 t. Salt
- 3 Bananas (mashed)
- 3/4 C. White Sugar
- 1 Lg. Egg (lightly beaten
- 1/3 C. Butter (melted)
- 1/3 C. Packed Brown Sugar
- 1/8 C. All Purpose Flour
- 1/8 t. Ground Cinnamon (or more to your taste)
- 1 t. Butter
- 1/4 C. Confectioners Sugar (optional)
Preparation
- Preheat oven to 350 degrees; Grease an 8″ cake pan
- Mix together the flour, baking soda, baking powder and salt in a large bowl; in another bowl beat the bananas, sugar, egg and melted butter
- Stir banana mixture into the flour mixture until just moistened; pour batter into prepared cake pan
- Mix brown sugar, flour and cinnamon in a small bowl; cut in the butter until mixture resembles coarse meal; sprinkle topping over the cake; Bake for approx. 35 minutes
- Remove from oven; place on a wire rack and cool; use a sharp knife around side of cake pan and place on serving plate
- Sprinkle with confectioners sugar (optional)

I remember when I was a kid standing in line for ever on Friday afternoons with my family. Everyone was there after work to get their baked goods for the weekend. My uncle Ward Flynn went to Suncoast high school during the 60s I wondered if you knew him? So many good things gone from that area now blizzard N burgers, skis on Northlake Boulevard all gone, it’s such a shame. I was curious if you remembered how to make the vanilla cake with the buttercream icing that was so popular for kids birthdays back then. Our family never celebrated an occasion without a cake from Siegfried’s. My father was a hospital administrator for St. Mary’s hospital for years. He told me the owner got sick and passed away, then the family sold the business, but the bakery was never the same afterwards.

Kathleen – Love your Blog! I’ve been following it now for years. A followup question to what FLGirl asked back in February – I also grew up in the North Palm Beach area and attended Riviera Beach HS in the late 60s. My Mom routinely went to Siegfried’s Bakery to buy their FANTASTIC Rum Cake. I see that you never got any of their recipes, but is there any chance that Ziggy, or his son, or any other family are still in the area and could be contacted for a recipe? I’d be glad to follow up with them if you have a lead! Thanks!
Ooh, great idea! Please let me know if you are successful in finding Ziggy and/or family. I would also be glad to help in any way I can, so please let me know if there’s anything I can do. I am actually planning a trip back to that area in a couple of weeks and will see if I can do a little detective work then. What I wouldn’t give for another Siegfried’s brownie!

Hi, thanks for your nice comments. I don’t know if any of the Blaschke’s are still around this area. Will check, since my mother died I have lost touch. I graduated RBHS 1965 and most of the recipes came from Mrs. Blaschke’s family from Germany. Now you are testing my memory.
Oh, I’m so excited to see your reference to Siegfried’s Bakery! I grew up in Palm Beach Gardens (many years ago) and I still to this day long for the wonderful frosted brownies we used to buy there. You wouldn’t happen to have the recipe for these, would you, or maybe even just something similar? In the meantime, I will definitely be trying your banana crumb cake. It looks delicious!
