Peach Upside Down Cake

When I got back from Watauga, TN from an inspiring vacation I knew I had to try my hand at Refrigerator Peach Jam, but it was a rush to use some of the peaches to make a beautiful fresh peach cake since when I arrived home “it was raining in my living room”.  Obviously I had some work ahead of me regarding my home but somehow this cake was important too!  I was exhausted from the clean up and trying to get someone up on the roof (literally) but it was well worth the time I took out to bake this simple cake with beautiful South Carolina peaches.

Peach Upside Down Cake


  • 1 1/2 C. Flour
  • 2 1/2 t. Baking Powder
  • 1/4 t. Salt
  • 1/3 C. Shortening
  • 2/3 C. Sugar
  • 1 Lg. Egg (beaten)
  • 3/4 t. Vanilla Extract
  • 1/2 C. Milk
  • 3 T. Butter (melted)
  • 3 T. Brown Sugar
  • 3-4 Large Peaches (peeled, pitted and sliced)
  • 2 0z. Refrigerator Peach Jam (or store-bought) (Optional, although recommended)


  1. Whisk together the flour, baking powder and salt (or sift)
  2. Cream together the shortening and sugar
  3. Add the beaten egg; beat thoroughly and add the vanilla
  4. Add dry ingredients alternately with the milk; stir only enough after each addition blend thoroughly
  5. Add approximately 2 oz. of the “Refrigerator Peach Jam”  (see here for recipe) to the batter
  6. Pour the melted butter in cake pan; add the brown sugar
  7. Add the sliced peaches in a pattern
  8. Pour the batter over the peach and sugar mixture
  9. Bake at 350 degrees for approximately 35-40 minutes
  10. Remove from oven and place on wire rack to cool for 10 minutes
  11. Run a sharp knife around the edge of the pan and invert cake onto a serving plate
