Caprese Tart

As easy as an Insalata Caprese (The Salad from Capri) (Caprese Salad) and much better than ordering a pizza.  (I have never made pizza dough and there is no place around my neighborhood that sells it.)  Make this fast and fresh tart for a quick lunch or a simple dinner.  For me nothing can go wrong with tomatoes, mozzarella and fresh basil, it is always a success.

Caprese Tart


  • 1 9″ Pie Shell (or purchased)
  • 1/4 C. Parmesan Cheese (grated)
  • 2 Beefsteak Tomatoes (sliced) (or other tomatoes of your choice)
  • 1/2 lb. Marinated Mozzarella (these were purchased at Costco)*
  • Handful of  Fresh Basil Leaves

* To marinate Mozzarella/let soak in olive oil, fresh herbs for about 2 hours)


  1. Grate the Parmesan Cheese on the bottom of the pie shell
  2. Layer on the sliced tomatoes
  3. Add the mozzarella and fresh basil
  4. Bake at 350 degrees for 35-40 minutes
  5. Set aside for 5 minutes to cool before cutting
