Baked Sweet Potato Fries

It’s so hot in South Florida I did not want to even bake a potato, but I really wanted to eat some. So, I cut up the sweet potatoes for fries and baked them in the toaster oven. Take that Summer in Florida! Very little prep time and a shorter time in the oven!
Baked Sweet Potato Fries
Ingredients
- 2 Lg. Sweet Potatoes (washed)
- 2-3 T. Olive Oil
- Salt
- Freshly Ground Pepper
- Fresh Parsley (snipped for garnish)
Preparation
- Cut potatoes in strips
- Toss in olive oil, salt and pepper; set aside for 20 min.
- Preheat oven to 350 degrees
- Bake 35-40 minutes (skins will crisp and potato will be tender)
- Serve on a warmed plate and garnish with snipped fresh parsley
(Serves 4)

I love sweet potato fries but I’ve never tried leaving the skins on – I like the idea of having that added crisp factor. Thanks for the tip!

Haha, it is survival in Florida! Doing mostly cold and chilled things at this time of year but sometimes you just Must have what I call a real dinner.
