Blueberry Marmalade Upside Down Cake

I have made this simple cake for many years but when I bought some “Blueberry Marmalade” from Renee of www.freakinflamingo.com  I had an idea to add it to the batter; it was more than a great idea.  When you take your first bite, you will agree that there is nothing wrong with simple, simple.

Blueberry Marmalade Upside Down Cake

  • 1 1/2 C. Flour
  • 2 1/2 t. Baking Powder
  • 1/4 t. Salt
  • 1/3 C. Shortening
  • 2/3 C. Sugar
  • 1 Lg. Egg (beaten)
  • 3/4 t. Vanilla Extract
  • 1/2 C. Milk
  • 3 T. Butter (melted)
  • 3 T. Brown Sugar
  • 1 Pint Blueberries
  • 4 0z. “Freakin Flamingo” Blueberry Marmalade *
  • 1/4 C. Confectioners Sugar (optional for topping)

 Preparation

  1. Whisk together the flour, baking powder and salt (or sift)
  2. Cream together the shortening and sugar
  3. Add the beaten egg; beat thoroughly and add the vanilla
  4. Add dry ingredients alternately with the milk; stir only enough after each addition to blend thoroughly
  5. Add approximately 2 oz. of the “Freakin Flamingo Blueberry Marmalade” to the batter
  6. Pour the melted butter in cake pan; add the brown sugar
  7. Add the blueberries
  8. Pour the batter over the blueberries and sugar mixture
  9. Bake at 350 degrees for 30-35 minutes
  10. Remove from oven and place on wire rack to cool for 10 minutes
  11. Run a sharp knife around the edge of the pan and invert the cake onto the serving plate
