Banana Cake with Cream Cheese Frosting

An easy and special cake for a lazy Sunday. Old-fashioned with bananas and walnuts, I could not ask for more today.
Banana Cake with Cream Cheese Frosting
Ingredients
- 3 Ripe Bananas (mashed)
- 3/4 C. Granulated Sugar
- 1/2 C. Light Brown Sugar (lightly packed)
- 1/2 C. Vegetable Oil
- 2 Extra Lg. Eggs
- 1/2 C. Sour Cream
- 1 t. Vanilla Extract
- Zest of 1 Orange
- 2 C. All-Purpose Flour
- 1 t. Baking Soda
- 1/2 t. Kosher Salt
- 1/2 C. Walnuts (chopped)
- Cream Cheese Frosting (recipe below)
Preparation
- Preheat oven to 350 degrees; grease and flour 9″ round cake pan
- Mix bananas, sugar and brown sugar in a bowl on low-speed until combined
- Add oil, eggs, sour cream, vanilla and zest; continue to mix until smooth
- Stir the flour, baking soda and salt in a separate bowl until combined
- Add the dry ingredients to the wet mixture and mix on low until well combined
- Add the chopped walnuts and mix thoroughly
- Pour batter into pan and bake for 45-50 minutes (until toothpick inserted in center comes out clean
- Cool for 15 minutes; turn out onto cooling rack and cool completely
- Frost with prepared Cream Cheese Frosting and sprinkle with the other finely chopped walnuts
Cream Cheese Frosting
Ingredients
- 6 oz. Cream Cheese (room temperature)
- 6 T. Unsalted Butter (room temperature)
- 1 t. Vanilla Extract
- 2 1/2 C. Confectioners’ Sugar (sifted)
- 1/2 C. Walnuts (finely chopped for topping/optional)
Preparation
- Combine cream cheese, butter and vanilla and mix on low-speed
- Add sugar and continue to mix until smooth; set aside until cake is ready to frost
