Asparagus and Ham Frittata

Enjoying the asparagus season in as many ways as possible this month and this frittata is a keeper.  Have it for dinner and a great treat in the morning too.

Asparagus and Ham Frittata


  • 1 Bunch Asparagus (washed)
  • 1/2 lb. Ham (cut in 1″ pieces)
  • 5-6 Lg. Eggs
  • 2 T. Whole Milk
  • Salt
  • Freshly Ground Pepper
  • 1/2 C. Swiss Cheese (diced)
  • 1/2 C. Parmesan Cheese (grated)
  • 1 T. Unsalted Butter
  • Fresh Parsley (for garnish)


  1. Blanche the asparagus and set aside
  2. Whisk the eggs with milk, salt and pepper; add  ham and 1/2 C. cheese and mix thoroughly
  3. Preheat the oven to 350 degrees
  4. Pour egg mixture into an oven proof pan and melt 1 T. butter; add the egg and ham mixture; add the asparagus gently
  5. Heat until  mixture is set; add the Parmesan cheese to the top and transfer to the heated oven and finish the frittata (about 10 minutes)
  6. Turn to Broil and broil about 1-2 minutes
  7. Serve on warmed plates and garnish with parsley
