Beefsteak Tomato and Onion Salad

It is that time of year here in Florida for garden tomatoes.  Everyone seems to grow their favorites and sharing is a good thing.  When I received these beauties the other day I knew this plain and simple salad was part of my dinner.  When tomatoes are just that good it is best to enjoy them as they are.  The only better way is to eat them right off the vine in the garden.

Beefsteak Tomato and Onion Salad


  • 2 Beefsteak Tomatoes (sliced)
  • 1/2 Red Onion (diced) (may substitute any onion choice)
  • Fresh Parsley (chopped)
  • Fresh Chives (chopped)
  • Salt
  • Freshly Ground Pepper
  • Extra Virgin Olive Oil


  1. Wash and slice tomatoes and plate on chilled serving dish
  2. Add the chopped onions, parsley and chives
  3. Add salt and pepper and garnish with a drizzle of olive oil
  4. Keep chilled until ready to serve or serve immediately

(Serves 4)
