Spanish Chickpea Salad

A simple and great chilled salad for a hot day and a nice salad to serve at your “Tapa Party”.  I love this salad when I have friends over a feast of Tapas.  I must admit in Spain I seldom had their salads when doing “Tapas All Night” , but here in Florida with the weather so warm sometimes many people want a few salads so I always have a few for the party.

 Spanish Chickpea Salad


  • 1 Can Chickpeas (16. 0z.)
  • 2 Bell Peppers (cut in small pieces)
  • 1/2 Onion (minced)
  • 1 Garlic Clove (minced)
  • 4 Small Tomatoes (cut in small pieces)
  • 1/2 lb. Ham (cut in small pieces)
  • Handful of Fresh Parsley (chopped or snipped)
  • Extra Virgin Olive Oil
  • White Wine Vinegar
  • Salt
  • Freshly Ground Pepper


  1. Drain and rinse the chickpeas
  2. Put the cut tomatoes in a bowl; add the peppers, onion and ham and mix thoroughly
  3. Add the parsley and garnish with olive oil, vinegar, salt and pepper to season

(Serves 4; Serves 10-12 for Tapas)
