Broiled Sea Bass with Lemon Shallot Butter

You can cook almost any fish this way, plain and simple but the lemon shallot butter does give it some flair.  Most of the time this is my preferred method of cooking fish whether I make the sauce or not.  Be sure to get your vegetables ready first as this fish will be ready FAST.


 Broiled Sea Bass with Lemon Shallot Butter


  • 1/2 lb. Sea Bass (per person)
  • 3 T. Unsalted Butter
  • 1 Shallot (med.-lg.) (chopped)
  • 2 Lemons
  •  2 T. Canola Oil
  • Salt
  • Freshly Ground Pepper
  • Fresh Parsley (for garnish)


  1. Preheat Broiler
  2. Salt and pepper both sides of the sea bass, pour the oil over the fish and squeeze 1/2 lemon over the fish
  3. Broil the fish (about 4″ from the heat for 8-10 minutes; until fish is opaque
  4. Simultaneously melt the butter over medium high and saute the shallots and cook until tender
  5. Add the juice of 1 lemon and continue to whisk
  6. When fish is ready; remove from oven; let rest 1 minute
  7. Place on warmed plate and add the lemon shallot butter and fresh parsley
