Peas and Shallots

I serve peas as a side dish quite frequently, not only do I like them, they just seem to go so well with so many things.  I never had my children decline to eat them until a friend came to dinner (adult, and she did not like them) and she proceeded to vault them with a spoon across the table.   Maybe she would have liked them better with the garlic and shallots?  Shallots make that a bit more difficult to do this athletic feat.  The secret to cooking frozen peas for me is to just saute them in butter and they stay bright and fresh.

Peas and Shallots


  • 2 C. Peas (frozen)
  • 1/2 C. Shallots (sliced)
  • 1/4 t. Garlic (minced)
  • 2 T. Butter


  1. Saute the shallots in the butter until tender (about 2-3 min.)
  2. Add the garlic and continue for about 1 more minute
  3. Add the peas and heat thoroughly
  4. Serve in a warmed bowl immediately
