Strawberry Fool

Well, everybody loves a “fool”, come on you know you do and you know what I am talking about.  What a great name for a simple dessert.  I am all so good with fresh fruit and whipped cream, gussy it up in many ways and it could be different every night.  And yes, there will be more fools in my life.

Strawberry Fool


  • 2 C. Fresh Strawberries (washed, hulled and sliced – save 4 for garnish)
  • 2 T. Grand Marnier (optional)
  • 1-3 T. Sugar (depending on your taste for sweetness, can be omitted)
  • 1 C. Whipping Cream
  • 1/2 t. Vanilla Extract (optional)
  • Fresh Mint Leaves (for garnish)


  1. Put sliced berries in a bowl and add the Grand Marnier and sugar to macerate, covered for about 30 minutes at least
  2. Mash the berries gently with a potato masher to a pulpy puree (do not use a blender)
  3. Whip the cream in another bowl until it holds soft peaks
  4. Gently fold in the strawberry puree into the whipped cream
  5. Spoon into glasses and chill for at least 1 hour
  6. Serve with the whole berry and some fresh mint
