Seven Bean and Tomato Soup

A delicious, robust soup that will satisfy you for dinner.  I mentioned before that a friend brought me a seven bean mixture (which I would have never thought to buy), but with that 1 bag of beans that cost one dollar ($1.00) I made two scrumptious soups, (the first one was Seven Bean and Country Sausage Soup) serving 4 people each time.  Yes, there was an additional cost of a few other ingredients, but quite minimal.  And if I needed to serve more, just add more tomatoes.  Just add a simple green salad and a wonderful baguette to go along with this beautiful dinner.

Seven Bean and Tomato Soup


  • 2 T. Oil
  • 1 Onion (chopped)
  • 1 Garlic Clove (minced)
  • 2 C. Seven Beans (prepared per package directions)
  • 2 Cans Diced Tomatoes (15.
  • 1 Can Vegetable Stock (14.5 oz.)
  • 1 t. DriedThyme
  • 1/4 t. Crushed Red Pepper Flakes (or more)
  • Salt
  • Freshly Ground Pepper
  • Fresh Chives (snipped for garnish)
  • 4 oz. Sour Cream (for garnish)


  1. Saute the onion in the oil until tender; add the garlic and saute
  2. Add the beans and tomatoes and bring to a boil; simmer for about 15 minutes
  3. Stir in the sausage, salt and pepper to taste and heat thoroughly
  4. Just prior to serving stir in the spinach and bacon and heat again
  5. Serve immediately in warmed bowls and garnish with sour cream and chives
