Bacon and Cheese Grits with Fried Eggs

A wonderful Sunday morning treat, or any morning as far as I am concerned, but Sunday it just feels better for some reason.  Of course it is even better and faster if you happen to have some leftover grits, I always try to plan on that scenario.

Bacon and Cheese Grits with Fried Eggs


  • 4 C. Water
  • Salt and Pepper
  • 1 C. Stone-Ground Grits
  • 3 T. Unsalted Butter
  • 2 C. Sharp Cheddar Cheese
  • 6 Slices Bacon (sliced in small strips)
  • 2 T. Fresh Chives (chopped)
  • 2 Eggs (per person)

(Grits recipe is for 4)


  1. Bring water to a boil; add salt and pepper and add grits
  2. Cook grits until water is absorbed (about 20 minutes)
  3. Remove from heat and stir in cheese and butter
  4. Fry the bacon until browned; remove and drain well (reserve fat)
  5. Fry the eggs (your style)
  6. Spoon the grits on a warm plate; add the eggs and garnish with chives

(Serves 4)

      Hi Megan, you are right, do not forget grits in the morning they go with everything/sometimes I make them the night before just for that reason. Thanks for visiting and all your help.
