Pears Belle Helene

Indulge with pears, chocolate and ice cream.  This I could do everyday but do it while you have beautiful pears in the market.  I don’t often see this perfect dessert combination at restaurants but that doesn’t matter as it is so easy to make.  I did not get this photo of the chocolate soon enough, so I will be making them again – very soon.

Pears Belle Helene


  • 4 Whole Pears (peeled whole, leave stem on)
  • 1/4 C. Sugar
  • 1 Lemon (juiced)
  • 1 Cinnamon Stick
  • Chocolate Sauce (see below)
  • Vanilla Ice Cream (optional for garnish)
  • 2-3 Mini Almond Biscotti (per person/optional-for garnish)


For the Pears (to poach)

  1. Place the pears upright in a deep pot
  2. Sprinkle sugar over the pears; add water, lemon juice and cinnamon stick and simmer for about 20 minutes on medium heat
  3. Drain the pears, reserve juice.  Put the pears back in the juice, cover and chill in the refrigerator.  (I do this in the morning so they will have plenty of time to chill)

For the Chocolate Sauce (make just before ready to serve)

Ingredients and Preparation

  • 4 oz. Semi-Sweet Best Quality Chocolate
  • 1 C. Heavy Cream
  • 1 t. Honey (optional (I do not use as that is too sweet for me)

Place the chocolate in a heavy saucepan over medium high heat;  bring the cream and honey to a strong simmer in another heavy saucepan. Remove from the heat and pour over the chocolate. Let sit for 5 minutes then stir slowly until it is thoroughly combined and serve immediately
