Chicken Parmesan

 A very simple dish to put together for a tasty evening….(IF you have saved some Marinara Sauce (Simple Tomato Sauce) the last time you made it).  If not it can be a lenghty process and I really like to have the sauce made a day ahead if at all possible.  Once the sauce is complete it really is only minutes to saute the chicken and layer the ingredients but what a fabulous dinner.  I never order this at restaurants here in the states they just cannot seem to get it right or maybe I just like my own Marinara better.

Chicken Parmesan


  • 2 C. Marinara Sauce (See Simple Tomato Sauce) or purchase
  • 2 T. Olive Oil
  • 1/2 t. Fresh Rosemary Leaves (chopped)
  • 1/2 t.Fresh Thyme Leaves (chopped)
  • 1/2 t. Fresh Italian Parsley Leaves (chopped)
  • Salt
  • Freshly Ground Pepper
  • 4 Chicken Cutlets
  • 1 lb. Mozzarella (sliced or shredded)
  • 1 C. Parmesan Cheese
  • Fresh Basil or Parsley Leaves (for garnish)
  • 1/2 lb. Spaghetti (Optional; served with)


  1. Mix the oil and herbs together in a bowl to blend; season with salt and pepper
  2. Pour over the chicken and marinate about 15 minutes
  3. Saute the chicken about 2 minutes on each side (just until brown); remove and set aside
  4. Preheat oven to 350 degrees
  5. Put a layer of Marinara Sauce on the bottom of a baking dish
  6. Add the chicken, a layer of Mozzarella and Parmesan Cheese and additional Marinara
  7. Top with remaining Mozzarella and Parmesan
  8. Bake about 25-35 minutes (until the cheese melts)
  9. Serve with a side of spaghetti with additional Marinara Sauce
  10. Garnish with Basil or Parsley
