Chili con Carne con Huevos

Saturday morning…. I always feel I am entitled to a breakfast treat.  One of the reasons I make chili is to enjoy this great breakfast.  There are certain leftovers that just get better and this is one of them.  It can be any chili, yours, mine or a new one to try!  I actually won a contest years ago for a recipe with Chili con Carne and eggs (some money and a plaque), but who knows where that information is now, but if I find it I will add it to the site.

 

Chili con Carne con Huevos

Ingredients (per person)

  • 1 C. Chili con Carne (leftovers) (Recipe Here)
  • 2 Large Eggs
  • 1 T. Unsalted Butter

Preparation

Heat chili in a pan while melting butter in separate pan.  Fry eggs in butter (to your taste).  Plate chile and add two eggs per person.  Add bread, toast or muffins and enjoy!
